Kiwi Marmalade

Our friend Lucy came for a visit and brought one of her homemade jams as a present for us. When Francesca, our fantastic wwoofer tried it, she liked it so much she decided to make some of her own. We found the recipe on Lucy’s website. And thanks to Francesca we now have 10 jars of the stuff…although it tastes so good it might not last very long!

Recipe for kiwi marmalade:

2kg kiwis, peeled and chopped
4 large oranges
2 large lemons
2kg sugar

1. In a large jam pan sprinkle sugar over kiwis and the chopped zest of the oranges and lemons. (Save the juice.) Leave overnight.
2. Bring to a rapid boil and add the lemon and orange juice.
3. Boil to setting point and put in jars.
